1 cup cold, salted butter, diced into 2 Tbsp. pieces
3/4 cup granulated sugar
3/4 tsp. almond extract
2 1/4 cup all purpose flour
3 1/2 Tbsp. nonpariels sprinkles, divided.

1. Butter a 9 x 13 baking pan and line with 2 sheets of parchment paper (one horizontally and one vertically. Butter between parchment sheets so they will stick. Leave at least a 1" overhang to lift them out of pan.

2. In the bowl of your electric mixer cream together butter and sugar until well combined. (not light and fluffy, just well blended.)

3. Mix in almond extract. With mixer set on low, slowly add flour and mix until combined.

4. Mix in 2 1/2 Tbsp. of sprinkles.

5. Press dough into an even layer in baking pan. I used my hands, and then the bottom of a measuring cup to smooth it out. Sprinkle the remaining 1 Tbsp sprinkles into dough, pressing in.

6. Chill in refrigerator for 30 minutes.

7. Preheat oven to 350º. Lift dough from pan using parchment overhang. Cut into 1/2" pieces using sharp kniffe. Cut into long rows. Run wide spatula underneath to remove from parchment. Place about 1/3 of squares onto baking sheet. Scatter out because they spread a bit when cooking.

8. Bake 8-12 minutes (keep remaining dough in refrigerator while baking first batch.} Repeat process but don't add them to the same baking sheet. Add them to a cool baking sheet. Cool completely, then transfer to an airtight container.
