2 c. creamy peanut butter (Not the all-natural variety. I just use Jiff)
1½ c. granulated sugar
½ c. brown sugar, packed
2 large eggs
2 tsp. baking soda
2 tsp. pure vanilla extract (I used imitation, it's all I had)
½ tsp. Kosher salt (Again, just used regular salt)

Heat oven to 350º.

Using an electric mixer, beat peanut butter & sugars on medium-high speed until fluffy, 2 - 3 minutes. Reduce speed to low & beat in the eggs, baking soda, vanilla & salt.

Roll heaping Tablespoonfuls of the dough into balls & place on parchment lined baking sheets, spacing 2 inches apart. With a lightly floured fork (I didn't flour the fork so that I could keep them gluten free), press the dough to ⅜ inch thickness, making crisscross pattern on top of cookies.

Bake, rotating baking sheets halfway through, until the edges are set, 10 - 12 minutes. Cool slightly on the baking sheets, then transfer to wire racks to cool completely.

Store the cookies in an airtight container at room temperature for up to 5 days.
