2 cups rolled oats
1 cup walnuts
1 cup pecans
1 cup almonds
1/2 cup sunflower seeds
1 cup pepitas {shelled pumpkin seeds}
1/2 cup flaxseed
1/4 cup flour
3/4 teaspoon salt
2 Tablespoons cinnamon
1/2 cup honey
1/2 stick butter, melted
1 Tablespoon vanilla
1 cup canned pumpkin or 1 cup applesauce
1/2 cup mini chocolate chips
3/4 cup chopped dates
1/2 cup raisins
1 cup dried cranberries
1 cup shredded coconut

Directions:
Directions:
In a large bowl, combine oats, nuts, seeds, flour, salt and cinnamon. In a smaller bowl, mix honey, butter, vanilla and pumpkin. Pour honey mixture over the nut and seed mixture. Toss until well coated. Spread mixture on baking sheets and bake in batches at 300 degrees for 20 minutes. Turn trail mix, stir and bake another 15 minutes…or until dry, but not burned.
Cool completely. Add chocolate chips, dried fruit and coconut, stir. Store in an airtight container for a week or longer-term in the freezer.
This recipe makes approximately 3 quarts of trail mix which will last us for several weeks.
