2 cups milk
¼ cup butter
¼ cup all-purpose flour
1 teaspoon salt
¼ teaspoon freshly ground black pepper
¼ teaspoon nutmeg (optional)
(8-oz.) extra sharp and mild Cheddar cheese, shredded - i mix up white and orange
1/2 (16-oz.) package elbow macaroni, cooked

Directions:

Preheat oven to 375º

Melt butter in a sauce pan. Remove from heat. Stir in salt, pepper, nutmeg and flour until smooth. Return to heat and gradually stir in milk bringing mixture to a boil. reduce heat ans simmer 1 minute. remove from heat.

stir in half the cheese and the macaroni. Transfer to a baking dish and top with remaining cheese. Bake until top is golden brown. recipe can be doubled if desired.
