1 stick grated butter
1 tsp. baking powder
1 tsp. vanilla
1/2 tsp. salt
1 egg (optional)
1-1/2 c gluten free flour
1/2 c almond milk
cinnamon



Directions:

Mix the wet ingredients and then add the flour. Mix until blended but don't overwork. These are all approximate measurements as I add items as needed.

Mix in the following depending on what flavor you want:
lemons juice and grated lemon
mini choc chips
nuts
dates
raisons
cranberries
blueberries

Form batter into an oblong on a floured surface and cut into 8 like sized squares. Sprinkle with cinnamon.

Bake at 400º for 15 minutes. Cool and eat. These are not sweet but the addition of the fruit adds to the flavor.

I love scones and make these frequently. I never use the same amounts so had difficulty writing down a recipe. Give it a try and make changes to the ingredients as needed. Good luck and enjoy.
Note, I always used sour cream in mine until I went dairy free. If you don't avoid dairy, use some sour cream, real cream or yogurt to make these scones more tender and tasty. Happy baking.
