Medium-sized whole chicken
2 tomatoes
2 medium onions
9 black peppercorns
12 parsley stalks
Fresh thyme
1 bay leaf
1 large lemon

Directions:
Directions:
1. Put the chicken in a large pot.
2. Add the tomatoes, onions in their skins, and peppercorns. Tuck in the parsley stalks, the thyme and the bay leaf. Cut the lemon in half and add it to the pan.
3. Pour enough water to cover the chicken. Bring to a boil, skim the froth, then turn the heat down to a simmer.
4. Simmer for an hour.
5. The meat should be tender but not falling of the bone.
6. Pull from the stock and pull the meat of in larger pieces.
