Ingredients: 2-3lb chicken (I use about 5-6 boneless skinless thighs) but you can use all white meat if you prefer 2 Boxes of Uncle Ben’s Long Grain & Wild Rice 1 lg tablespoon of bacon grease or 2 tbsps butter. (Bacon grease is best... but if you don’t have you can use butter) 1 family size cream of mushroom soup 1 package of grated Colby Jack or Pepper Jack cheese. (I use Colby Jack)

Directions:In large pot cook both boxes of rice according to directions . While rice is cooking, prepare chicken. In large skillet melt butter or bacon grease Add cut up pieces of chicken. And stir fry until completely done. I like to cook mine on high to give it browned edges. Drain any excess fat or grease after you are done. (If it’s not much I leave it for added flavor) Add entire can of cream of mushroom soup to the meat. Stir couple times to melt it a little, dump all into pot with rice. (I make my rice in xl pot to have room to mix all together) or you can mix all together in a 9x13 pan. Either way, combine all that in 9x13 and cover top with grated cheese of your choice. Bake on 375 for about 30 mins or until cheese is melted and turning golden brown. |
