2 Tbsp oil
1 large onion, diced
3 pounds canned diced petite tomatoes
Garlic salt
Chicken bouillon
Corn tortillas, about 25
Canola oil for frying tortillas
Shredded cheese

Directions:
Directions:
In a large skillet, sauté onion in oil until transparent. Add a few shakes of garlic salt. Add tomatoes, and mash up. Add boullion until you taste sufficient salt. Simmer until thickened, about 15 minutes. Fry one corn tortilla in oil, allow to drain. Place it onto the tomato mixture, spoon it around and coat both sides. Transfer to a plate, sprinkle cheese in the center and fold in half. Repeat with remaining tortillas. Microwave to melt the cheese if necessary.
