1 pkg. (12 oz.) frozen haddock fillets
1/2 tsp. salt
1/4 tsp. pepper
1 sm. onion, thinly sliced
1 tomato, peeled and cut into 1/2 in. slices
1 T. lime juice
1 T. oil
1 T. parsley
8 pitted olives, sliced

Directions:
Directions:
Heat oven to 375 degrees. Arrange fillets in ungreased square baking dish, 8x8x2. Sprinkle with salt and pepper. Layer onion and tomato on fillets; sprinkle with lime juice, oil and parsley. Top with olives. Cover and bake 30 minutes. Uncover and bake until fillets flake easily with fork, about 15 minutes.
