2 Cucumbers, or 1 English cucumber
2 Carrots
1/4 C Celery
1/2 C Onion
1/2-1 Bell pepper
1 Bunch radishes
1 Zucchini
2 C Mayonnaise
1 T Lemon juice, or wine vinegar
1 tsp Salt
1 Envelope of unflavored gelatin dissolved in a 1/4 C of cold water

Grind or grate with a food processor all of the vegetables. Drain the vegetables in a colander. While they are draining, put the gelatin in the cold water, mix together, and heat in the microwave for 30 seconds and turns clear. Mix together the next 3 ingredients in the bowl you will serve the vegetables I spread in. Add the gelatin and the drained vegetables, and mix well. Chill at least 2-3 hours.

Serve on small rounds of bread, or crackers. Will keep for a week in the refrigerator.
