⅔ cup vegetable oil
1 egg
½ tsp salt
2 tsp soda
1 tsp ground ginger
1 cup sugar
¼ cup molasses
2 cups flour
1 tsp cinnamon
¼ cup sugar

Directions:
Directions:
Combine oil and 1 cup sugar in a large bowl. Add egg and beat well. Stir in molasses. Combine flour, salt, soda, cinnamon and ginger. Add to molasses mixture, stirring to mix. Roll into 1" balls then roll each ball into remaining ¼ cup sugar. Place 2" apart on greased cookie sheets. Bake at 350º for 10-12 minutes or until lightly browned. Remove to wire rack.
