1 Unbaked pie shell
2 Heaping cups shredded Swiss cheese
1 Heaping cup of Jack/Cheddar blend shredded cheese
4 eggs
1 cup half and half

Jen's Additions:
Cooked and crumbled bacon
Sauteed broccoli florets and onions
Sauteed mushrooms, garlic and onion
Sauteed spinach and onions

Directions:
Directions:
Preheat oven to 425 degrees
Place the cheese in the pie shell, you can use either froze or refrigerated pie shell.
Beat eggs in the half and half to create the custard. Pour the custard over the cheese.
Place the pie on a cookie sheet and put into the oven for 15 minutes.
After 15 minutes lower the temperature to 375 degrees and cook for an additional 45 to 55 minutes until an inserted toothpick comes out clean.

If you decide to use any of the additions, add half the cheese to the pie shell, ⅔ of the addition, the remaining cheese and the last of the addition, then pour on the custard. Bake using the same directions as above.

Christmas Eve dinner in the Drouin Family is a pretty serious matter. Cracked Dungeness crab, clam chowder, quiche, sour dough bread, and we always make a green salad that no one really eats. Dessert is always no bake cherry cheese cake, Mary Pat's Christmas tree sugar cookies, and other assorted sweets and candies. Beverly's quiche made it's appearance in the early 1970's and it's been a permanent dish ever since.

As an adult I have used Mom's basic recipe to create my breakfast frittata and started adding different additions to the basic recipe over the years. This is a stand alone dish or you can change it into something for your own tastes.
