1 lb. Beef, ground or stew meat, chopped small, cook with the garlic and onion, saving drippings
2 Cloves garlic, chopped
1 Onion, chopped
1/2 C Lard, shortening or butter
1/2-3/4 C Broth
1 C Corn, frozen or fresh
2 C Corn masa
3/4 tsp Salt
1/4 tsp Pepper
1 tsp Baking powder
1 C Red chili sauce or green chili
1/2 -3/4 C Grated cheese

Preheat oven to 350º

Remove meat from drippings. Add the 3/4 C green chili or red if desired, and mix thoroughly. Measure drippings as you need at least a 1/2 C. Add lard or butter to make a 1/2 C total, put in a mixing bowl. Add the a 1/2 C broth, and the masa, corn, a 1/4 C of the green chili, salt, pepper, and baking powder and beat on high until light and fluffy. Add a little more liquid if the masa is too stiff, should be a little thicker than pancake mix.

Grease a 9x13 pan or large casserole and spread a layer of the masa mixture on the bottom, about 1/2 the mix, then pour the meat mixture over it, then the remaining masa, spread evenly and add the grated cheese.. Cover with foil and bake 20-25 minutes, remove foil and let cheese brown for an additional 10 minutes. Let stand for 5 minutes and serve.
