Directions:Finely chop 5 hard boiled eggs in separate bowl. In a large bowl add all the remaining ingredients and blend well, add chopped eggs and blend in lightly. Chill sauce while pasta is boiling. Boil pasta until al dente, drain and lightly rinse with cold water. Add pasta to the sauce and coat completely, if the pasta looks a little dry add mayonnaise using a ¼ cup at a time. If the pasta looks like there is a little to much sauce don't worry, the pasta will soak it up. Use an egg slicer to slice the remaining egg and spread the slices across the top. Last, sprinkle paprika lightly over the entire top. Cover the bowl and chill for at least 1 hour, 2-3 is best. |

Notes: You may notice that this recipe just interchanges pasta for potatoes, yup it does. My mom makes the Best Macaroni Salad I've ever had and I decided not to compete in that arena or Mary Pat's with potato salad. This family has some amazing cooks and we all hope you will create new recipes to pass on as well.
