6-8 Medium Red potatoes
6 hard boiled eggs
½ of an onion, finely diced
4 ribs of celery, finely diced
⅓ cup dill pickle relish
2 cup mayonnaise
3 Tbsp. whole grain mustard
6 dashes of hot sauce
1 to 2 tsp. Tony's Seasoning salt, to your tastes
½ tsp. cayenne pepper
½ tsp. garlic powder
½ tsp. black pepper

Paprika and sliced egg rounds to garnish

Directions:
Directions:
Scrub the potatoes under water to clean, place in a large pot and cover with water. Bring potatoes to a boil and allow to boil until fork tender, about 7-10 minutes. Drain and allow to cool.
Finely chop 5 hard boiled eggs in separate bowl.
In a large bowl add all the remaining ingredients and blend well, add chopped eggs and blend in lightly. Chill while chopping potatoes.
Chop potatoes into medium sized cubes and add to the sauce, mix well to coat the potatoes.
Use an egg slicer to slice the remaining egg and spread the slices across the top. Last,sprinkle paprika lightly over the entire top.
Cover the bowl and chill for at least 1 hour, 2-3 is best.

Potato Salad is my favorite and no one has ever made better potato salad then Auntie Mary. I asked her to teach me how to make it when I was a teenager and those lessons are some of my best memories. I've definitely strayed from the original recipe, but she told me as an adult I had created a great potato salad of my own!!
