1 egg
1/3 c canola or other vegetable oil
2/3 c milk
1 1/2 c tapioca flour
1/2 cup grated cheese ( I usually use Parmesan and cheddar)
1 tsp salt

Directions:
Preheat oven to 400 degrees. Spray mini muffin tins. Put all ingredeings into a blender and pulse till smooth. Scrape down sides of blender if necessary. Pour batter into tins leaving 1/8 inch space from top. Bake in oven for 15-20 minutes or till puffy and lightly brownd. Remove from oven and let cool for a few minutes. Best eaten while warm.
