CRUST:
1 cup all purpose flour
1/2 cup brown sugar
1/2 cup quick oats
1/2 cup butter

FILLING:
2 cups pumpkin
2 eggs
1/2 tsp salt
1/2 tsp ginger
13 oz evaporated milk
3/4 cup sugar
1 tsp cinnamon
1/4 tsp cloves

CRUMB TOPPING:
1/2 cup chopped nuts
2 Tbsp butter
1/2 cup brown sugar

Directions:
Directions:
#1 Combine ingredients for crust. Press into a 13X9X2 pan. Bake at 350º for 15 minutes.
#2 Pour the filling over the crust. Bake at 350º for 20 minutes.
#3 Put crumble over filling and bake at 350º for an additional 15 minutes.
Let sit for approx. 30 minutes before cutting. Serve with dollop of whipped cream.

This recipe brings back such wonderful memories. Nothing warms the soul like pumpkin pie! These squares have an easy bottom/crust so you don't have to slave away with a rolling pin (but you still get the same deliciousness of homemade pumpkin pie!)
