1 lb boneless skinless chicken breast
Salt and pepper
1/4 cup flour
1 tablespoon butter
1 cup sliced onion (in rings)
5 medium potatoes, skin on, sliced into rounds
1/4 cup grated parmesan, romano and asiago cheese
1 tablespoon paprika
1/2 cup red wine
1/2 cup chicken broth

Directions:

Mix flour, salt and pepper in large bowl or baggie.
Cut chicken in to shapes like chicken fingers,
Coat chicken with the flour mixture
Melt butter in large saute pan (I use a 12 inch fry pan that is about 2.5 inches deep)
Saute the chicken in the butter until golden brown on both sides.
Layer onions and potatoes on top of chicken.
Add wine and chicken broth
Sprinkle with cheese and paprika
Cover and simmer approximately 45 minutes.
