Ingredients: 1/4 lb Feta cheese 1 pkg (8oz) cream cheese 2 tbsp beaten egg 8oz phylo dough (fresh or frozen) 1/2 cup unsalted butter (melted) 1/4 cup fine dry bread crumbs

Directions:Crumble Feta cheese into bowl of electric mixer. Combine with cream cheese. Add egg and blend well. Place in refrigerator to chill.
Place a damp towel on counter and cover with wax paper. Unfold phylo dough and place on wax paper. Cut width-wise into thirds.
Brush top and bottom surfaces lightly with butter. Sprinkle top lightly with bread crumbs. Fold each section lengthwise in thirds to form a section about 2 inches wide.
Place a teaspoonful of filling in top corner of section. Fold corner to cover cheese mixture and form a triangle. Brush with butter, as needed, and repeat.
Place on buttered baking sheet and brush with butter.
Bake at 400ºF for 15 minutes or until golden brown. Serve immediately. |

Notes: You can prepare these in advance and freeze them. Simply cool them on a wire rack. Once cooled, arrange in a single layer on a tray and freeze. Once frozen hard, transfer them to a plastic container for storage in the freezer. To reheat, arrange the frozen pastries on a baking sheet and reheat in an oven at 350F for 10 minutes or until heated through.
