1/4 lb Feta cheese
1 pkg (8oz) cream cheese
2 tbsp beaten egg
8oz phylo dough (fresh or frozen)
1/2 cup unsalted butter (melted)
1/4 cup fine dry bread crumbs

Directions:

Crumble Feta cheese into bowl of electric mixer. Combine with cream cheese. Add egg and blend well. Place in refrigerator to chill.

Place a damp towel on counter and cover with wax paper. Unfold phylo dough and place on wax paper. Cut width-wise into thirds.

Brush top and bottom surfaces lightly with butter. Sprinkle top lightly with bread crumbs. Fold each section lengthwise in thirds to form a section about 2 inches wide.

Place a teaspoonful of filling in top corner of section. Fold corner to cover cheese mixture and form a triangle. Brush with butter, as needed, and repeat.

Place on buttered baking sheet and brush with butter.

Bake at 400ºF for 15 minutes or until golden brown. Serve immediately.

You can prepare these in advance and freeze them. Simply cool them on a wire rack. Once cooled, arrange in a single layer on a tray and freeze. Once frozen hard, transfer them to a plastic container for storage in the freezer. To reheat, arrange the frozen pastries on a baking sheet and reheat in an oven at 350F for 10 minutes or until heated through.
