1/3 c oil
1 c chopped onions
1/2 c sliced celery
1/2 c chopped yellow pepper
1/2 c chopped red pepper
4 small zucchini, diced
2 c chopped fresh tomatoes
2 Tbs chopped fresh basil
2 Tbs lemon juice
1/2 c sliced black olives
2 Tbs capers
salt & pepper

Directions:
Directions:
Heat oil. Saute onion, celery, and peppers, then add zucchini, tomatoes, basil, salt & pepper. Simmer 15 minutes. Take off heat and add lemon juice, olives, and capers. Serve warm or at room temp. Good on toasted pita (Brush pita with olive oil and sprinkle with garlic salt. Bake till golden.) or pita chips or with a spoon! Store in frig.
