½ cup all-purpose flour
1 large egg, lightly beaten
1 cup panko breadcrumbs
1½ lb boneless, skinless chicken breasts, cut in half
1¼ teaspoons salt, divided
2 tablespoons vegetable oil
1½ cups heavy whipping cream
½ teaspoon dried thyme
3 tablespoons orange marmalade

Directions:
Directions:
Place flour, egg, and panko in 3 separate, shallow bowls.
Pound chicken pieces to ¼-inch thickness; sprinkle with 1 teaspoon salt.
Dredge chicken in flour, dip in egg, and dredge in panko.
Heat oil in a large nonstick skillet over medium-high heat; add chicken, and cook 3 minutes on each side or until done.
Remove chicken from skillet, and keep warm.
Wipe skillet clean; add cream, thyme, and remaining ¼ teaspoon salt.
Bring to a boil, reduce heat, and simmer, stirring often, until thickened.
Stir in marmalade; serve sauce over chicken.
