Preheat oven to 350º
8-10 cups fruit, peeled and cut up
1/2 cup flour
1 tsp salt
1 1/2 cups sugar
3 Tbsp fresh lemon juice

For the Topping
2 cups flour
4 tsp baking powder
2 Tbsp sugar
1 tsp salt
1/2 cup butter
2/3 cup milk
1 egg

Directions:
Directions:
Peel and cut the fruit.
Toss it with the flour, salt, sugar and lemon juice.
Pour into a 13 x 9 " baking pan and bake for 15-20 minutes or until fruit is bubbly.
In a mixing bowl mix dry ingredients.
Cut in butter as for pie crust.
Add milk and egg.
Drop by spoonfuls onto hot fruit.
Bake another 20 minutes until crust is golden brown and no longer doughy.
Serve with whipped cream or ice cream.

We made cobblers nearly every day in the shop.
One of the best was pear but one time we forgot to peel the pears. Sheryl, one of our best customers didn't like that. That didn't happen again.
Virtually any fruit is good prepared like this and be sure to try any combination......Raspberry and peach....Blueberry and nectarine.
Apple and cranberry......Strawberry and rhubarb....The list goes on and on.
Makes me want summer to come back.
