Salad:
6 c. salad (I use baby spinach. Can also use any spring green mix)
1 red apple
1 green apple
1 c. walnuts, roughly chopped
⅓ c. crumbled feta cheese
⅓ c. dried cranberries

Dressing:
1 c. apple juice
4 T. apple cider vinegar (or white vinegar in a pinch)
2 T. honey
scant ½ tsp. salt
¼ tsp. black pepper
¼ c. olive oil

Directions:

Core and chop apples (thin slices or 1 in. chunks). Toss salad, apples, walnuts, feta and cranberries together in a large bowl. Whisk together dressing ingredients. Toss with salad immediately before serving.

You can use poppyseed dressing instead of this homemade dressing (although the homemade dressing is very good!)
