2 cups graham cracker crumbs (store bought crumbs work best)
12 tbsp butter, melted
½ cup powdered sugar
4 cups peeled, cored and chopped apples (I like honeycrisp or granny smith)
⅓ cup sugar
¼ cup brown sugar
2 ¼ tbsp flour
½ tsp cinnamon
¼ tsp nutmeg

1. Preheat oven to 350 and grease mini muffin pan with cooking spray.
2. Mix graham cracker crumbs, powdered sugar and slowly add melted butter. (Start with 1 stick of melted butter and slowly add to crumbs-you want a soft dough that sticks together slightly when you try to form a ball, not a wet dough. You can always add more melted butter, but it can start to pool if you add too much butter)
3. Evenly distribute mixture to mini muffin cups. Press along the bottom and sides to make a 'cup'. (I use a tablespoon measuring cup to pack it in instead of my fingers)
4. Bake for 5 minutes and let them cool completely. Leave them in the muffin pans.
5. Chop the peeled and cored apples into little pieces. You can use a food processor, but don't puree.
6. Mix apples, sugar, brown sugar, flour, cinnamon and nutmeg in a bowl.
7. Bake in a dish for 15 minutes on 375º until apples are slightly softened.
8. Scoop a tsp or so of apple mix into each graham cracker cup (while still in the muffin pan).
9. Sprinkle any extra graham cracker mixture on top of the apples.
10. Bake for 5 minutes at 350º.
11. Let them cool completely.
12. Use a knife to loosen from pan and they should pop out.
13. Drizzle with caramel topping.
