6-8 pieces of chicken
2 cups of buttermilk
1 teaspoon pepper
1 teaspoon Chilli powder
1 teaspoon parsley
1 teaspoons paprika
3 large eggs
2 cups all purpose flour
2 teaspoons of salt
1 teaspoon thyme
1 teaspoon garlic powder
1 teaspoon onion powder
Peanut oil for frying
1 large ziplock bag for shaking

Soak chicken in buttermilk 6-8 hours
Season all chicken pieces with salt and pepper
Whisk eggs in a bowl and set aside
In a large shallow bowl, combine flour and seasoning
Place 1/2 the dry ingredients in a ziplock bag and reserve the rest
Remove the chicken from buttermilk and place in ziplock bag a few pieces at a time and then shake to coat chicken
Place chicken on a baking sheet and then
Dip each piece of chicken in egg mixture
Coat chicken with flour mixture in bowl completely after egg dip again

Heat a large skillet with peanut oil to 325 degrees
Fry chicken until golden brown and when juices run clear inside
Place on a wire rack to drain excess oil and serve
