3 to 3½ pounds chuck pot roast
1 Tbsp oil or shortening
2½ cups water
2 tsp salt
¼ tsp pepper
1 bay leaf
4 medium onions, sliced
3 stalks of celery, cut in pieces
6 medium carrots, cut in pieces
4 medium potatoes, cut in halves or quarters

Brown pot roast on both sides in oil in heavy pan for about 15 minutes. Add water, salt, pepper, bay leaf, 1 onion and celery. Cover tightly and simmer 2 to 2½ hours until meat is tender. Add carrots, potatoes and remaining onions; simmer 45 to 60 minutes until tender. Remove meat and vegetables to heated patter. If desired, thicken juice with 3 Tbsp flour mixed with ¼ cup water. Add to pot juices and cook, stirring constantly, unil mixture comes to a boil and thickens. Serve with meat.

Tip: You can omit the salt, pepper, 1 onion and celery and use 1 envelope of dry onion soup mix instead.
