4 large Boneless Skinless Chicken Breasts
Chili Powder
Cumin
Garlic Salt
Coriander
1/2-1 tsp. Cayenne
1 can Rotel
Colby Jack Cheese, shredded
Large can Enchilada Sauce
Flour Tortillas (soft taco size)

optional to add;
Black Beans
Olives
Green Onions
Jalapenos

Directions:
Directions:
Place in a Crockpot the Chicken Breasts, Season with all the seasonings, and pour can of Rotel in. Cook on High for 4 hours.

Shred chicken with a fork.

Lay flour tortillas out and fill with Chicken, Cheese and any optional items of your choice.

In a 9x13 pan spoon some Enchilada Sauce to cover bottom of pan. Roll filled tortillas up and place in pan seam side down. Cover completely with Enchilada Sauce and shredded cheese.

Bake @ 350 until heated through, bubbling and cheese is melted
