3 1/2 c. flour
3 tsp. baking powder
1 tsp. baking soda
2 c. mashed ripe bananas (4-6 bananas)
2 Tbsp. lemon juice
3/4 c. shortening
1 1/2 c. sugar
3 eggs
3/4 c. milk
1/2 c. nuts (optional)

Directions:
Directions:
1. Mash bananas with hand mixer or fork. Add lemon juice. Mix together and set aside.
2. Cream shortening and sugar. Add eggs and beat thoroughly until they are light and fluffy.
3. Add flour, baking powder, baking soda, salt, and milk. Beat after each addition.
4. Fold in the bananas and nuts (if desired).
5. Pour into greased loaf pans (2-3 pans)
6. Bake at 350º for 1 hour or until toothpick poked in the center comes out clean.
7. Cool in pan for 10 minutes then remove to a clean cloth to finish cooling.
