1 Small Onion Chopped
1Tbsp Canola Oil
1 tsp Chopped Garlic
1 tsp Oregano
1tsp Cumin
1 (15oz) can Diced Tomatoes
1 (15oz) can Black Beans drained
1 C Rice uncooked
2 C Shredded Colby Jack Cheese

Directions:
Directions:
1. Preheat oven to 350º
2. Saute chopped onion in canola oil.
3. Add garlic, oregano, cumin, tomatoes, and beans to onion.
Cover and cook on medium heat for 15 minutes.
4. Cook rice according to direction on package.
5. Add rice to cooked mixture and mix well.
6. Combine mixture into casserole dish and top with cheese.
Bake for 15 - 20 minutes until cheese is melted.
