½ cup rice
1 cup water
3 eggs
3 cups milk
1 cups sugar
Nutmeg

From the cookbook: "Boil water with a little salt. Add rice and cook. Add milk and continue cooking. Beat 3 eggs with 1 cup sugar. Mix with rice and milk mixture. Bake at 350º until thick."

Notes: I like the rice well cooked and will cook it until the water is almost gone before adding the milk. Pyrex containers with lids work nicely, and with a 9 or 10in glass pan, I usually bake at 350º for 1hr 10min before checking thickness with a toothpick. After putting it in to bake I let it thicken some and then sprinkle nutmeg on top.

Every time we visited Grandma Lockhart's house I would hope she had made rice pudding. Every time. I could tell as soon as I walked in the door if she had some in the oven - the nutmeg doesn't lie! This isn't her recipe, but it's the one I've adopted as mine. I think I got the cookbook it comes from when I was about 10 years old, and I have been making it ever since.
