8 eggs
2 ½ c. flour
1 ½ c. sugar
½ c. oil
2 tsp. baking powder
1 lemon or orange rind (grated)

Directions:
Directions:
Heat the oven to 375º F.
Place egg yolks and sugar in a mixing bowl and beat until lemon coloured.
Beat egg whites until stiff but not dry and then fold into the egg yolk mixture.
Sift the flour in a separate bowl and slowly place it into the egg mixture. Add lemon or orange rind.
Butter and flour an 18 inch square cake pan or 9 x13 pan.
Pour cake batter into prepared pan and bake at 375º for 40 minutes or until toothpick inserted in centre comes out clean.
Remove cake from oven and place on rack to cool.
Slice & enjoy!
