20 oz Ground Beef
2 oz Pancetta, small dice
½ ea Spanish Onion, small dice
1 ea Carrot, peeled and small dice
1 ea Celery Stalk, small dice
3 ea Garlic Cloves, sliced thin
3 Tbl Tomato Paste
4 oz Red Wine
4 oz Milk
28 oz Whole Peeled Roma Tomatoes, crushed
1 ea Bay Leaf
TT Salt/Pepper

Directions:
Directions:
In a large pot over medium-high heat, brown the ground beef. Degrease and reserve.
In the same pot, add the pancetta over medium heat and render. Remove the pancetta, leaving the grease in the pan.
Increase the heat to medium-highand sweat the mirepoix (approx 5 min.).
Add the garlic and cook until fragrant before adding the tomato paste and the wine. Reduce the wine down by 50% before adding the rest of the ingredients.
Bring the sauce to a simmer and reduce heat to low. Let simmer for up to four hours.
Season with salt and pepper and serve.
