1 Beef roast at least 4-5 pounds
1 bottle/can of beer
Whole garlic

Heat oven to 500º

Rinse the roast with tap water. Poke holes in the top and sides of roast and stuff with cloves of garlic (not garlic powder or salt)

Sprinkle generously on all sides with salt, pepper, garlic powder and onion powder

Put roast into a heavy baking pan rubbed with olive oil.

Place pan in oven for 15 minutes, uncovered. When time has elapsed, remove pan and pour beer over the roast. Be careful as beer will splatter.

Reduce oven temperature to 225º. Cover roast completely with foil and bake at least 5 hours.

This recipe was given to me by Mom, but it quickly became a favorite at our house! It smells delicious while cooking. Make gravy from the drippings in the pan and serve with homemade mashed potatoes and roasted veggies.
