¼ cup butter
½ cup chopped onion
½ cup chopped green pepper
½ cup chopped celery
⅓ cup flour
1 cup hot water
1 quart milk
1 Tbsp chicken bouillon granules (or 3 chicken bouillon cubes, crushed)
1 tsp salt
½ tsp dry mustard
½ tsp pepper
2 cups shredded cheddar cheese

Directions:
Directions:
In large saucepan, melt butter; add onion, green pepper and celery. Cook until tender. Blend in flour; slowly stir in hot water. Blend in milk; cook and stir until smooth and thick. Add chicken bouillon, salt, dry mustard, and pepper; stir. Add shredded cheddar cheese; stir and heat until cheese melts. Makes 6 to 8 servings.
