Whole chicken (preferably kosher or organic)
3 Carrots
1 Large Onion
4 Ribs of Celery
¼ cup Parsley
3 cloves Garlic
2 Parsnips
1 box Chicken broth (large)
Water
Matzo Ball mix

Directions:
Wash, dry and remove skin from the chicken. Cut into pieces. Cut up vegetables (carrots, onion, celery, parsnip) in large pieces. Put chicken and vegetables in the pot. Leave the skin on the onions. Add broth to pot. Fill with water. Bring to a boil. Skim off foam and discard. Add garlic and Parsely (tied in a bundle so it can be removed). Reduce heat and cover. Cook for 4-5 hours.

In the meantime, render the chicken fat from the skin, by putting the skin in a large Teflon pan a low heat. Fry, pressing on the fat and skin, until all of the fat is rendered and the skin is crispy.

Make Matzo balls according to package directions. Use the chicken fat rendered from the skin. Do not cook them in the chicken soup because that will suck up all of the broth you have so lovingly made.

Remove the chicken and the vegetables from the broth. Taste broth. Adjust seasonings. If you wish a richer broth, bring the broth to a boil and reduce until the broth has the strength that you seek. Let them cool. Separate the meat from the bones. Discard the vegetables. If you want vegetables in your soup you can cook them separately to your desired level of doneness. Serve chicken on the side if you wish (it’s pretty dry, though).

I know this looks like a lot of work, but really it's the most Amazing thing ever and not just for a cold!!!
