2 c. sugar
1 c. light corn syrup
1 c. water
3 c. unroasted (raw) Spanish peanuts
¼ tsp. salt
1 tsp. butter or margarine
¼ tsp. baking soda

Directions:
Directions:
Combine sugar, corn syrup, and water in a heavy skillet. Cook slowly until sugar dissolves. Cook to soft ball stage. Add peanuts and salt. Cook to hard crack stage, stirring constantly. Add butter and baking soda; stir to blend (mix will bubble). Pour onto buttered plate or platters. Cool partially by lifting around edges with spatula. Keep spatula under mix-moving so it won't stick. When firm, but still warm turn over; pull edges to make brittle thinner in center. Break pieces to desired size when cold.
