3 t. oil
9 eggs
3 t. sugar
4 c. flour
t. salt


9T. sugar
3 ricotte
6 egg yolk
1 lemon grated

4 beaten egg yolks (to spread on dough)

Mix all dough ingredients in bowl.
Roll dough on baking board and flatten.
Lay the flattened dough on a pan.
Spread ricotta filling on flattened dough.
Roll another piece of dough and lay on top of filling.
Make sure to press all around the pan so filling won't come out.
Spread beaten egg yolk on top of cashatello.
Put slits on top of dough with clean scissors.

Bake on bottom rack at 350 F for 25 minutes or until light brown.
