1 lb. okra (frozen can be used) 1/2 c. water
1/2 onion, chopped 2 T. parsley
1/2 c. olive oil Salt & pepper to taste!
1 8 oz. can tomato sauce

Directions:
Directions:
Wash okra, and trim not too close to top. Sprinkle with lemon juice and set aside for 15 min.
Saute onion lightly in oil. Add half of the tomato sauce and combine.
Put into bottom of casserole. Put in okra an simmer for 10 minutes, and add rest of tomato sauce,
water and parsley.
Bake in moderate oven until okra is tender.
