1 lb. fresh lump crab meat, carefully picked
3 T unsalted butter
1 cup chopped onion
1/3 c chopped celery
1 tsp. dry mustard
1/2 tsp cayenne pepper
1 egg, slightly beaten
1/3 c mayonnaise
1/2 c fresh bread crumbs
2 T fresh chopped parsley
salt and pepper to taste
1 c fine dried bread crumbs

Melt butter in small saute pan over medium heat. Add onion and celery and sauté until soft. Stir in mustard and cayenne pepper, cooking for 1-2 more minutes. Allow mixture to cool. Transfer cool mixture to bowl and add crabmeat, mayo, egg, fresh bread crumbs and parsley. Fold together until mixed thoroughly. Season to taste with salt and pepper. Form into 8 cakes about 1/2 inch thick.
Place dried bread crumbs in a shallow plate or bowl and coat cakes evenly with bread crumbs.

Cover and refrigerate at least one hour. (Cakes hold together better when chilled).
Heat oil (1/2 to 1 in. depth) in large frying pan over medium heat. Fry cakes, turning once, until golden brown (2-3 mins each side). Serve over lettuce or greens. May serve with Remoulade Sauce.
