¼ cup butter
½ cup each finely diced onions, celery, carrots
¼ cup flour
⅛ tsp baking soda
1½ TBsp cornstarch
1 cup cheese (cheddar or velveeta)
Salt and pepper to taste
2 TBsp parsley
1 quart milk
1 quart chicken stock

Directions:
Directions:
Melt butter, sauté onions, carrots, and celery, add cornstarch and flour cook until bubbly, add stock and milk to make a smooth sauce add soda and cheese, add salt and pepper. Just before serving, add parsley.
