1 ½ lb skinned, boned, split-breast-about 3 medium breasts
1 T cooking oil
Deep-frying oil

Seasoning mixture:
1 tsp cooking wine
½ tsp accent
1 T soy sauce
½ tsp sesame oil

Batter Mix:
¾ cup pancake mix
1 egg
½ water

Sauce Mix:
1¼ cup chicken broth (or 1 can)
2½ T cornstarch in ¾ cup water
½ cup shredded cooked ham
½ cup peapod *frozen)
1 T soy sauce
½ cup shredded bamboo shoots
½ cup cooked straw mushrooms
Fine almond bits

Directions:
Directions:
1. Mix seasoning mixture to chicken and let it stand for 10-15 minutes.
2. Saute bamboo shoots and straw mushrooms in 1 T hot oil in skillet for 3 minutes. Add soy sauce, chicken brother, and simmer for 5 minutes.
3. Mix step 1 with batter mix. Deep fry for 5 minutes (350 degrees) and set on the serving plate.
4. Ham (and peapod) is added to step 2 and let boil. Cornstarch solution is added to thicken the sauce with stirring and wait until the sauce boils again. Pour over the cooked chicken. Sprinkle almond bits on top and serve with rice.
