2 c. finely crushed gingersnaps
3 T. salted butter
1 T. brown sugar

Filling:
4 oz. cream cheese, softened to room temperature
4 large egg yolks
14 oz. can condensed milk
1/2 c. finely shredded coconut
1/2 c. key lime juice (either fresh or bottled)
2 tsp. lime zest
1/4 tsp. salt
Confectioners sugar for dusting

Preheat oven to 350 degrees. Line a 9 x 9" baking dish with foil, then spray with vegetable spray.

Mix melted butter with brown sugar. Pulverize cookies and mix with butter and sugar. Press firmly into pan and bake for 10 minutes.

Beat cream cheese until smooth. Beat in egg yolks until incorporated. Beat in condensed milk, coconut, lime juice, lime zest and salt until combined.

Pour into warm crust once it is done baking. Bake for 15-18 minutes or until edges of the bars begin to brown. Allow the bars to cool at room temperature in pan or on wire rack. Once cooled, place in refrigerator to chill completely (at least 2 hours).

Once chilled, lift bars out of pan using the foil overhang. Cut into squares. Garnish with 10 x sugar.
