2 cubes of softened butter
7 cloves minced garlic
2 T chopped rosemary
2 T thyme
1 T salt
1 tT pepper.

Directions:
Debone the roast and recalculate the weight. Pat dry then rub butter mixture on all sides of the roast. Put it on a rack and roast at 500 for 5 min per pound.

Turn off the oven and don’t open the door for two hours. This is for a 5–7 lb roast so increase if needed.

Add flour, about 1/4 cup, to the drippings and whisk to boiling. Add beef broth to the desired consistency for gravy.
