4 chicken breasts, skins removed (10 oz each)
1 tsp salt
1/2 tsp pepper
2 cups chicken broth
1 cup mushrooms, sliced
2 stalks celery, diced
3 T onion, chopped
2 sprigs parsley
1 bay leaf
1 tsp sherry
2 cans medium tomatoes, chopped (or fresh tomatoes, peeled and seeded)

Directions:
Directions:
Split chicken breasts. Salt and pepper. Brown in olive oil over high heat, turning frequently. Transfer to baking dish.

Bake at 350º for 35 minutes.

While chicken is baking, combine broth, mushrooms, celery, onion, parsley and bay leaf in saucepan. Simmer 30 minutes. Add sherry and tomatoes. Pour over chicken.
