1 coddled egg (drop egg in boiling water 1 minute, then into ice water to cool)
2 T red wine vinegar
1/4 cup freshly grated Parmesan cheese
1 1/2 T lemon juice
1 T Dijon mustard
1 tsp Worcestershire sauce
2 canned anchovy fillets, drained and chopped, or 2 tsp anchovy paste
1 tsp drained canned capers
2 cloves garlic, pressed or minced

1/2 cup olive oil

Directions:
Directions:
In a blender, mix together everything but the olive oil.

While blender is running, slowly drizzle in olive oil, making a uniform emulsion.

You can mix with an immersion blender, or whisk it the traditional way, but I find a blender works best.

Toss with about 6 cups of chopped romaine lettuce, top with croûtons and more Parmesan cheese.
