Ingredients: 1 c. sifted flour ¼ c. cocoa 1 tsp. baking powder ¼ tsp. salt 3 lg. eggs (⅔ c.) 1 c. sugar ⅓ c. water 1 tsp. vanilla 1 (8 oz.) cool whip 2 bananas sifted powdered sugar Nestle's Quik butter hot water vanilla

Directions:1. Sift together the first 4 ingredients and set aside. 2. Beat eggs in small mixer bowl until very thick and lemon colored. Pour into large bowl. 3. Gradually beat in sugar. 4. Blend in water and vanilla on low speed. 5. Slowly mix in dry ingredients at low speed just until batter is smooth. 6. Pour into a jelly roll pan (15½ x 10½ x 1) that is lined with foil that has been greased. 7. Bake at 375ºF for 12-15 min.or until top springs back when lightly touched. 8. Loosen edges and immediately turn upside down on a towel that is sprinkled with powdered sugar. 9. Carefully remove foil and trim off any stiff edges. 10. Sprinkle top of cake with powdered sugar. 11. While cake is still hot, roll both cake and towel from narrow end. 12. Cool on wire rack. 13. Unroll cake carefully and remove towel. 14. Spread cool whip over cake. 15. Place bananas on narrow edge of cake and roll up. 16. Mix the rest of the ingredients together to make a thin, smooth frosting and spread on cake. |
