3 T unsalted butter,
2 T olive oil,
2 pound London broil,
1/2 c peeled and chopped shallots,
1/4 c chopped chives,
1 T red wine vinegar,
¾ c dry red wine.

Directions:
Directions:
Pick out a nice piece of London broil. Put 2 tablespoons of butter and olive oil in a hot skillet. Cook over medium heat until the butter melts and sizzles. Add your steak to the skillet and cook eight minutes on each side for rare. Remove meet to a platter. To make the sauce: pour off all but a couple of tablespoons of the liquid in the skillet. Chop shallots up fine, chives also, stir and cook under medium heat for about a minute. Add 1 tablespoon red wine vinegar and three-quarter cups of dry red wine. Reduce the liquid, season with salt and pepper. Remove from heat. Let cool for about two minutes off of the heat, melt in 2 tablespoons of butter. Slice the steak in half inch thick pieces, put on your plate and serve with the shell and chive sauce on top of the meat.
