6 skinless, boneless chicken thigh, cut into chunks
2 potatoes, peeled and chunked
1 onion sliced (thick)
1 can of peeled and diced tomatoes
2 small cans of Spicy V-8
Oil for sautéing
Flour
Salt and pepper

Directions:
Directions:
Cut chicken into cubes. Flour then fry chicken in shallow oil. Drain then season with salt and pepper. In chicken oil sauté onion and potatoes, sprinkle a tablespoon of curry powder over vegetables. Cover skillet and cook until potatoes are tender, tossing now and then. Put chicken, tomatoes and V-8 into mixture. Add 2 cans of water and simmer for 15 minutes. Check for salt and pepper.
