1 large eggplant
2 eggs, beaten
sauce
oil
salt

Directions:
Directions:
Slice the eggplant and salt. Let it sit for about an hour to remove any moisture. Heat oil. Add a couple drops of water to beaten egg. Dip each slice in egg and then fry in oil until golden brown. Drain on paper towel. Layer eggplant, tomato sauce, parmesan cheese and salt in deep 6" Pyrex dish.

I don't bake mine but you can.
