1 9" pastry shell

Filling:
1 c. sugar
3 T. corn starch
1 1/2 c. cold water
3 egg yolks, slightly beaten
1 lemons grated rind
1/4 c. lemon juice
1 T. butter

Topping:
3 egg whites
1/3 c. sugar

Directions:
Directions:
Filling: Stir together 1 c. sugar and corn starch in 2 qt. sauce pan. Gradually add water and stir until smooth. Stir in egg yolks, stirring constantly. Bring to boil over med. heat & boil 1 minute. Remove from heat. Stir in lemon rind, juice & butter. Cool. Turn into pastry shell.

Topping: Beat egg whites till foamy in small bowl with mixer at high speed. Add 1/3 c. Sugar (1 T. at a time). Beat till stiff peaks form. Spread on filling. Bake 350° for 15 minutes till lightly browned.
